In all my life I never thought I’d become vegan – I loved steak too much! But I’ve bought in to the plant based lifestyle.
However, as of mid-August 2021, I have been eating Whole Food Plant Based (WFPB) for four (4) years. Who’d have thunk it!?! The first question is why. Those of you who’ve known me long enough understand that I’ve always been an active person. However, that physical activity did not prevent my cholesterol from going up. My primary physician said, “No problem, I’ll just prescribe some statins.”
I asked for how long, and he basically said, “…for the rest of your life.” I asked about alternatives, and he claimed there weren’t any. I promised him I’d find one, and started doing some research.
It was incredible how much evidence was out there – for over 30 years – that a plant based diet will lower cholesterol, can reverse heart disease, can cure Type 2 Diabetes, and many more ailments. It took me a couple weeks to wean myself from meat and dairy (it’s so hard to give up cheese), and within 8 weeks I had cut my total cholesterol in half. I also didn’t have that need for a nap after heavy fat meals evident in the standard American diet, and my athletic recovery greatly improved.
I’m creating a Plant Powered Okie page for how-to’s, recipes, cycling/hiking and other activities, etc.
