As a matter of fact, Dr. Will Bulsiewicz (The Gut Health MD) purports that we need to eat those whole foods in order for the proper nutrients to be absorbed in the right ways and to feed those gut bugs that help us get the most out of the food we eat.
There is no reason we can ‘t get all the nutrients we need from our food (except perhaps Vitamin D in the winter, and some B12 supplements as needed). I highly recommend Will’s book on the subject. You won’t regret reading it. Fiber is the new ‘protein.’
